What we ruled out
Tubs with emulsifiers (mono- and diglycerides), stabilisers (guar, locust bean gum, carrageenan), and glucose syrup. These replace cream and egg with air, water, and cheaper sugars. Check the label: if it says 'frozen dessert' or lists vegetable fat, it isn't ice cream in the simple sense.
